
Microwave Bread ‘n Butter Pickles
Delicious & makes a great gift!
Ingredients
- 1 lg cucumber sliced in 1/4" thick rounds (2 cups)
- 1 med onion sliced in thin rounds (3/4 cup)
- 1 cup granulated sugar
- 1/2 cup distilled white vinegar
- 1/2 tsp mustard seeds
- 1/4 tsp celery seeds
- 1/4 tsp turmeric
Instructions
- Mix all ingredients in a 2-quart microwave-safe bowl.
- Microwave on high 7-8 minutes, stirring twice, until cucumber is crisp-tender and onion translucent.
- Ladle into a glass jar (rinsed with hot water to prevent cracking). Cover, cool slightly, and refrigerate.
Notes
Tested on 650-watt microwave – adjust time as needed.
