Microwave Bread ‘n Butter Pickles

  • 1 lg cucumber sliced in 1/4" thick rounds (2 cups)
  • 1 med onion sliced in thin rounds (3/4 cup)
  • 1 cup granulated sugar
  • 1/2 cup distilled white vinegar
  • 1/2 tsp mustard seeds
  • 1/4 tsp celery seeds
  • 1/4 tsp turmeric


  • Mix all ingredients in a 2-quart microwave-safe bowl.
  • Microwave on high 7-8 minutes, stirring twice, until cucumber is crisp-tender and onion translucent.
  • Ladle into a glass jar (rinsed with hot water to prevent cracking). Cover, cool slightly, and refrigerate.


Tested on 650-watt microwave – adjust time as needed.
